Day three Mission "Cabinet Dinner":

What's funny is, at the moment there is a lot to choose from in the cupboards and freezer!  Wait til this is two weeks down the road.  So, my meals may seem simple and no brainers, however, I am rather proud of myself!  Three days and I have not asked my hubby to pick up an ingredient on the way home.

Ingredients went as follows:

Package McCormick's Mild Taco Seasoning
chicken breasts
Keebler saltines crushed
salt and pepper
flour
rice

The rice went into the rice cooker, hard I know ;-)  My daughter placed the Keebler crackers in a ziplock and crushed them with the rolling pin.  In a medium bowl I put McCormick's Seasoning, flour, salt, and pepper.  Once the Keebler crackers were crushed they went in the bowl too.  Mixed that all up and put the chicken in to coat it.  Placed the chicken in a glass casserole dish, placed it in the oven at 375 degrees.  Was feeling rather tired and lazy, so last night we went without veggies, don't tell my mom :-)!!

Me - The chicken had good flavor, next time I think I may dip the chicken in egg first and then in the coating.  Rice is always good with some sour cream or butter.
